Deliciously Healthy Peanut Butter Oreos

One thing that continues to surprise me on my vegan journey is how simple ingredients can create a mouth-watering and incredibly healthy version of what we traditionally know as an unhealthy dish. Since I have the biggest sweet tooth in the world (honestly, it is shocking…), I decided to recreate one of my favourite sweet treats: Oreos. Oh, and I also added some peanut butter, because peanut butter goes with everything, right? The lack of wheat flour, milk, butter, eggs, and sugar means they are much lighter than its traditional equivalent, and of course much healthier. In fact, my deliciously healthy peanut butter Oreos are rich in fibre from dates, antioxidants from the cacao powder, protein from all the nuts, and calcium from the almond milk. Who knew that snacking on something so sweet and tasty can have so many wonderful benefits for your body?

All in all, you will spend max. 45 minutes in the kitchen creating 20 to 25 deliciously healthy peanut butter Oreos.

Ingredients

Cookie dough

  • 3/4 cup gluten free flour
  • 1/4 cup raw cacao powder (Raw cacao powder is packed with nutrients and flavour, while cocoa powder has lost most of it by being over-processed. Feel free to use cocoa powder as an alternative, though.)
  • 1/4 cup shredded coconut
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 cup fresh Medjool dates
  • 2 tbsp peanut butter
  • One tsp vanilla essence (use a fresh vanilla bean for more flavour)
  • 5 tbsp almond milk

Peanut butter filling

  • 3/4 cup fresh Medjool dates
  • 1/2 cup peanut butter
  • 1/2 cup coconut cream
  • 1/4 cup almond milk
  • One tsp vanilla essence (use a fresh vanilla bean for more flavour)
  • One tsp cinnamon

Once you have preheated the oven to 150Β°C, start by whisking together the first five ingredients for the cookie dough. Place the remaining four ingredients in a food processor and blend until creamy, which should take a couple of minutes. Carefully mix wet into dry and form a dough.

Sprinkle flour over a surface and roll out the mixture so that it’s about half a cm thick; using a small glass or a 5cm pastry cutter, form around 40-50 flat circles. Place them on a tray and bake for 15 to 20 minutes (depending on how crispy you like your cookies). Turn the oven off and let them sit for another 15 minutes before allowing them to cool completely at room temperature.

While the cookies are baking, it’s time to make the filling. All you have to do is to throw all the ingredients in your food processor and blend it up! Use about one tsp of filling for each cookie and enjoy!
